01/31/2017 The term ‘kebab’ has been derived from a Persian word that
denotes grilling. This is one of the most famous Middle Eastern cuisines and is
based on the concept of grilled meat. But nowadays it also consists of various
other variants.
You will find this dish pretty popular in British English
and contemporary America. In fact, here, kebab consists of small pieces of
meat, vegetables like tomatoes, onions and bell pepper and seafood. Though this
is a Middle Eastern dish, the succulent taste of kebabs have won over the hearts
of millions. It is popular throughout the entire world. The taste differs depending
on the method and country, it is cooked in.
For instance, in the other English speaking countries out of
the North America are used to using the gyros or shawarma from the kebab shops.
In these items, layers of meat are stacked on a large vertical rotational
split. The term ‘kebab’ can be used to describe any other skewered food such as
souvlaki, brochette and others.
So, let us see the types of kebabs served in various parts
of the world. You will be amazed at the varieties of kebabs. Mainly there are
two main varieties of kebabs namely Shish Kebab and Doner Kebab.
In Africa, this dish is known as Kyinkyinga. This is
prepared from liver or steak and is coated with peanut flour. This whole thing
is roasted on skewers.
In Greece, this dish is known as Gyros. It is made out of
chopped meat and onions. It is usually served in a pita bread along with the yummy
Greek sauce, which is prepared out of yoghurt, cucumber and garlic. The main
strategy is to roast this dish at a slow pace. Thus, the flavors can get mixed up
with the meat, thereby letting you have the mouth-watering tastes.
Amongst all the kebabs of the world, the Shish Kebab is the
most popular one. In turkey, shish denotes skewer and kebab means meat. You can
use salads and various vegetables with this dish to accentuate its taste.
A quick glimpse into the
ingredients of the shish kebab:
The basic ingredients remain the same for whatever kebab you
will be making. But, you have to start experimenting with various interesting stuffs
to obtain the great taste for your shish kebab.
So, the basic ingredient of your kebab is the meat. But make
sure that the meat you are using is tender and full of flavors. For instance, the
beef chuck is pretty tough. So, it has to be cooked slowly in order to obtain
the best flavor. The following cuts of meat are found to contribute to the
flavor most:
·
The leg of Lamb devoid of the silver skin and
connective tissue.
·
Boneless pork chops and pork shoulder
·
Boneless chicken thighs
·
Beef sirloin
The next primary ingredient would be the seafood. The most
relevant reason would be that fishes cook way faster than the meat when
subjected to high heat and fast cooking method.
The varieties of seafood are:
·
Scallops
·
Firm-fleshed fish such as halibut
·
Shrimp
Vegetables are obviously important to make a complete kebab
or rather the shish kebab. But you have to remember that the amount of vegetables
you will be taken must be well cooked. If it’s undercooked, it leads to less
flavor in your kebab. Corn, potatoes, tomatoes, asparagus and some others are
the core ingredients when we talk of kebabs.
The other vegetables are:
·
Onions
·
Bell peppers
·
Eggplant
·
Zucchini
·
Yellow squash
The main source of protein is these vegetables. Tofu is also
an option you can use instead of meat. But you got to select the firm tofu so
that it does not fall out of the grill.
What is a doner
kebab?
This is a special variety of Turkish kebab and consists of
the meat which is cooked on a rotisserie. It has several forms like shawarma,
gyros and others in various other parts of the world. Well, the concept is to turn
the seasoned meat (which is placed in the shape of an inverted cone) on a
rotisserie. The outer layer is sliced vertically into thin slices and used in
the process of preparing the dishes.
This is usually served in the form of flatbreads such as
pita. The pita breads are stuffed with these meat along with the tahini sauce. It
is also accompanied by the vegetables such as lettuce, tomato, onions, cucumber
and others.
Amidst the other kebabs, people seems to fall for these two at
the most.
